A family classic; so fluffy, not too sweet and easy to make. Perfect for a fast dessert to serve with coffee or hot chocolate. Bakes up in under 20 minutes!

- You will need:
- 6 tbsp (84g) unsalted butter, melted and fully cooled, plus 1 tbsp (14g) for greasing
- 1 egg
- 3/4 cup (182g) buttermilk, or 2 tsp (9.5g) vinegar in a 3/4 cup measure then add (172g) regular milk
- 1 tsp (4g) vanilla extract (or other flavoring), if desired
- 2 tbsp (27g) oil, vegetable or other
- 12 cup muffin tin

Ingredients: Unbleached Flour (niacin, iron, thiamin, riboflavin, folate), Sugar, baking Powder (sodium Bicarbonate, monocalcium phosphate), Sodium Bicarbonate, Salt. Powdered Sugar (sugar, corn starch)
