Rainy Day Linguine

Linguine & Sausage in Creamy Mushroom Sauce

Rainy Days are Good Days

While days without the sun tend to seem dark & gloomy, they are also an opportunity to savour the indoors. What better way to make the most of these darker days with a delicious pot of creamy linguine.

How to Make this Delicious Recipe

Serves 2

Ingredients
200g Swiss brown mushrooms, halved
2 tbsp olive oil
2 cloves garlic, crushed
2 mild Italian sausages (casings removed)
1/4 cup dry white wine
1/2 cup chicken stock
150g sour cream
2 green onions, chopped finely
150g dried linguine
2 tbsp fresh basil, finely shredded
red pepper chili flakes & salt to taste
Sun-dried tomatoes, soaked in 1/8 cup oil
Parmesan cheese, grated, to taste

Directions
1. Preheat oven to 400 F.
2. Place mushrooms in large shallow baking dish, drizzle with combined oil and garlic; roast, uncovered, about 15 minutes or until mushrooms are tender.
3. Meanwhile, cook meat in heated medium frying pan until browned and cooked through; drain on absorbent paper.
4. Place wine in same cleaned pan; bring to a boil. Reduce heat, simmer, uncovered, 5 minutes. Stir in stock and cream; return mixture to a boil. Reduce heat, simmer, uncovered, about 2 minutes or until sauce is hot. Remove sauce from heat; stir in mushrooms and onion.
5. Cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.
6. Place pasta in large bowl with mushroom sauce, sausage and basil; toss gently to combine.
7. Add parmesan cheese before serving.
